Mutton is certainly having a deserved come back in popularity. Mutton is richer in flavour than lamb and has darker meat. Mutton is often associated with delicious slow cooking recipes and is chosen for curries for good reason. Technically mutton refers to lambs that are two years old and more when they are physically mature, but still young animals in their prime. We select those over 3 years to make sure they have a full mature flavour.
