Boneless legs of our delicious slow maturing Free Range Pork are trimmed and each one is hand-cured - it is not mass produced. Once cured, they are washed and hung to air dry in our temperature controlled chiller room. Once dried, Simon trims the gammon and ties and cuts them into joints. With no bone the gammons are full of flavour and are perfect for boiling or baking, and finishing with a glaze of your choice, my favourite is a delicious honey and mustard glaze. You can carve easily and serve hot or cold.
