Mansergh Hall Organically Reared Rare Breed Pork

 
Mansergh Hall Pork is known for its fantastic flavour and consistent quality. Our herd of pigs, reared to Soil Association organic standards, are made up of rare breeds including Large Black, Gloucester Old Spot, Saddleback and our boar “Winston” is a large White cross Welsh.

The pigs graze and root a field at Mansergh Hall Farm known as “pig paradise”, and are fed organic feed. They have straw filled pig arcs to retire to as and when they feel like it. Most importantly they have one of the best views on the farm! In the winter, if the weather dictates, the pigs are brought into the warmth and shelter of our barns, with plenty of room and fresh air.

 
Our pigs are kept in family groups to further reduce stress and Jim or James personally load, transport and unload the pigs to a small abattoir only 20 miles away.
 
We collect the pork ourselves in our refrigerated van which is then hung for Simon to cut to our customer’s requirements, make into sausages and cure into bacon.

Boned & Rolled Leg of Pork

This is the perfect for a special-occasion roast meal. Large slices of lean meat with lots of crunchy crackling and hopefully some left over to eat cold.

Loin of pork - on the bone

The classic prime roasting joint – sometimes called a Rack of Pork, this is chined to ease carving and is succulent and tender.

Delicate and tender chops for grilling or my preferred methods of cooking is to bake them in the oven.

Cut from the fillet of the leg – these are large steaks great for grilling, baking in the oven or braising. Delicious with a creamy sauce.

A versatile cut that can be cooked as a whole or sliced and pan-fried

This is pork shoulder diced into cubes and is ideal for pork casseroles.
