Our bacon and gammons are cured by hand at Mansergh Hall using traditional methods. It is then washed and hung to dry ready for slicing.

Our own free range legs and loins of pork are dry cured by hand at Mansergh Hall to produce dry cured bacon and gammon.

Our plain dry cured bacon won the award for Best Overall Bacon 2003 in the North West Producer of the Year Awards.

Dry cured back bacon

Loins of Mansergh Hall free range pork dry cured at Mansergh Hall. Delicious bacon, how bacon should be!

Streaky dry cured bacon

Belly of our free range pork are dry cured for those that prefer a streakier bacon but with all the flavour. This is wonderful when wrapped round our home grown asparagus and grilled.

Smoked dry cured back bacon

Loins of free range pork are dry cured at Mansergh Hall then smoked at the Port of Lancaster Smokehouse.

Pancetta

Thinly sliced smoked streaky bacon.

Again, dry cured at Mansergh Hall and smoked at the Port of Lancaster Smokehouse Pancetta is a thinly sliced streaky bacon. Delicious wrapped round Lowther Free Range Chicken breast and stuffed with Stilton.

Dry cured gammon joints

Legs of our free range pork are boned out and dry cured at Mansergh Hall, once dried then are tied for cutting into joints. These are a real favourite for a special occasion and particularly at Christmas time. A full gammon can weigh as much as 7kgs.
